Kiri Bath



Milk Rice  is a traditional Dish in Sri Lanka and is known as kiribath in the sinhalese language.The recipe follows.

1/2 measure white rice
2 teacups thick coconut milk
salt
water for boiling the rice

Boil the rice like you usually do.When the water is all absorbed and  before the rice gets fluffy and nice,add the coconut milk and salt.Stir well.Cover the pan and cook until the milk is absorbed with the rice.
Serve with fish curry ,seeni sambol and katta sambol (  chilly and maldive fish chutney0

Egg And Cheese Toast



 Mash two boiled eggs .To this .add  1 tin grated cheese,pepper and salt to taste .Mix well set aside.
Take six-eight  slices of bread. Trim the edges.Cut into circles.
Spread tomatoe ketchup on each slice
Spread a generous amount of  the the  egg and cheese  mixture
Place on baking tray and bake for 5 minutes.
Optional :  sprinkle  ground pepper and.extra cheese.

Tomato Toast



Here are the ingredients needed for this recipe

1 gill tomato puree
1/2 lb grated cheese
2 tablespoon powdered breadcrumbs
1teaspoon made mustard
A pinch of cayenne or finely powdered dry chilly
Hot Buttered Toast

Mix  the cheese,breadcrumbs, chilly and the mustard with the tomato puree and stir over the fire uintil hot( do not boil).Spread this  mixture on hot buttered toasts and serve immediately.

Savoury Noodles.

Everyone at home loves noodles.So I make them very often for dinner.I make them with whatever vegetables I  rummage through my refrigerator.Some days I make it plain with only a sauce.I try as much as possible  to minimize the amount of vegetables in the noodles.For garnishing  I use coriander leaves or parsley

Rainbow Sandwiches

When my children  see a colourful plate they get enticed by it.Then they get tempted.So there's no problem making them eat sandwiches . Ribbon or rainbow sandwiches are a delight to the eyes..These colourful  sandwiches  get the attention of children very quickly.This is a 'must do 'menu  during Kiddies birthday parties .This is a very easy recipe and there's no heavy labour involved.You can also choose a title of your choice.


Rainbow Sandwiches.


Boil veggies like carrot and beetroot.Cool and mash it separately.Add butter,cream cheese,mustard paste to each of the mashed veggies.mix separately .Sprinkle with pepper and salt. 
Apply butter on the sliced sandwich .Spread carrot paste on one side of the sliced sandwich .Seal it with another slice.Then take a new slice and spread beetroot paste on it and lay it on the carrot sandwich.
Trim the edges and cut into quarters and serve.
You can also keep layering with different filings.


When ready arrange them beautifully  on a platter .When you serve  different  kinds of sandwiches,like cheese sandwiches,chicken sandwiches or veggie sandwiches,place a label on  each platter  denoting their variety.

Moringa Curry / Drumstick



Six drumsticks ( Moringa)
! big red onion ( sliced finely )
1-2 green chilly
1 tablespoon curry powder
1/2 teaspoon turmeric powder
1/2 teaspoon mustard and  fenegreek seed
3-4 cloves of garlic crushed
a few curry leaves
1 tablespoon oil
Salt to taste
1-2 tablespoon of coconut milk powder
1 glass of water for cooking

Method
Clean and cut the drumsticks into 21/2 inches long.Keep aside
In a pan heat the oil and fry the onions,chilly  and the curry leaves.When it turns pale in colour,turn in the garlic,mustard seeds and the fenegreek seeds and roast them for a about a minute.Add the curry powder and the turmeric powder.Mix well .Place the  drumsticks,salt  and the water  into the  pan. keep stirring it,so that  all the ingredients blend together.Cover with a lid and cook till it's done.Finally stir in  the coconut powder and  let it simmer for a few minutes.

Clearing,Cleaning And Eating

Since morning  I have been  busier than the other days,I have  one whole day to clear and clean my kitchen before we go on our summer vacation.Although going on vacation is exciting ,it's also kind of strenuous, because it requires all of our energy sorting out and packing  appropriate clothes to take on our vacation, cleaning and clearing all the perishable items from  the refrigerator and the larder.My husband had already removed the plug from the refrigerator.There are still half used food bottles and jars.and a little bit of dry rations like rice,flour and lentils which could be used for another week..Hope to give them to someone who will make use of them.I  prepared some  flat bread  from the left over  flour for breakfast.And for Lunch we had  ordered some take overs.Though it was just plain white rice and spicy curried  chicken for the adults and fried chicken for the children ,we really enjoyed the food ,because we were really hungry.

Summer Soup



Yoghurt is an excellent source of vitamins and calcium.It is a cooling food and is best eaten during Summer.It helps fight against osteoporosis , a serious health problem in women.Yughurt makes delicious side dishes, appetizers or can be used as desserts.Today I want to share with you this delectable recipe for soup using yoghurt and cucumbers.


Yoghurt and cucumber soup


I large cucumber
1. 1/2 cups of cream
1 cup yoghurt
2 cloves garlic finely pounded
1tbsp of vinegar
1 tbsp mint leaves
Salt and pepper according to taste


Finely grate the cucumber and mix it with the cream,yoghurt,garlic,vinegar and mint.Stir it well and add salt and pepper.Keep it to chill in refrigerator .Pour into soup bowls and serve immediately.
